Moi Moi (Bean Pudding) Recipe

Moi-Moi is a Nigerian meal that is typically made from beans, which is soaked, washed, blended with onions and peppers. And then steamed in special leaves called banana leaves. (they’re called “Ewe” in Yoruba,) The leaves are better because, when it’s steamed, the moi moi molds to the shape of the folded leaf and lends some flavor to it.
It can be enjoyed at different times of the day - breakfast, lunch or dinner - and by people of all ages.


Ingredients
Serves - 5 people
3 cups of brown beans or white beans.
Red bell pepper (Tatashe pepper)
Bonnet pepper (Atarodo)
Vegetable Oil
Nutmeg
Crayfish (optional)
2 large onion bulbs
Eggs (optional)
Boiled fish
Liver (optional)
Stock cubes
Salt to taste.


Directions.
*Soak the beans in water for 10-20 minutes then wash to remove the thin outer coat.

*Wash the beans to remove the brownish outer coat, keep squeezing, washing and sieving till you are left with the white beans.

*Add all of them (beans, onions, crayfish (optional), atarodo and tatashe) in a small clean bucket and take to the commercial grinding mill to grind.

*After grinding, you can add cooked fish, liver and eggs.

*While still in the bowl, Vegetable Oil about 8 to 10 cl to the mix, add seasoning cubes, nutmeg,  fish stock water (optional) and salt to taste. Taste the entire mixture.

*Using a spoon, scoop the mixture into the banana leaves and arrange in the cooking pot.

NB: If you are cooking with plastic bowls, you can drop the bowls on top of each other but you must drop the stem of the moi moi wrapper at the bottom of the pot to avoid burning.
*Then cover tightly and cook for about 30 to 50 minutes.

It can be Served with Pap (Ogi/Akamu, Agidi), rice, bread and custard.
